Lucknowi Vegetable Dum Pulao in Omichef Triply Biryani Pot

This Lucknowi-style vegetable dum pulao is elegant, fragrant, and lighter than biryani, yet full of royal flavor. It is a beautiful one-pot Indian recipe that works wonderfully in the Omichef Triply Biryani Pot, because the rice needs gentle heat and steam locking. A good pulao should never become sticky or mushy, and that depends heavily on the pot you cook it in.

Ingredients

  • 2 cups basmati rice
  • 1 cup mixed vegetables: carrot, beans, peas, cauliflower
  • 1 onion, sliced
  • 2 tbsp ghee
  • 1 bay leaf
  • 1 cinnamon stick
  • 3 cardamoms
  • 4 cloves
  • 1 tsp cumin seeds
  • 1 tbsp ginger-garlic paste
  • 2 green chillies
  • Mint leaves
  • Coriander leaves
  • Salt
  • 3.5 cups water

Step-by-Step Method

  1. Wash basmati rice until the water runs clear. Soak for 25-30 minutes.
  2. Heat ghee in the Omichef Triply Biryani Pot.
  3. Add cumin seeds, bay leaf, cinnamon, cardamom, and cloves.
  4. Add sliced onions and cook until light golden.
  5. Add ginger-garlic paste and green chillies.
  6. Add vegetables and sauté for 3-4 minutes.
  7. Add soaked rice and gently mix without breaking the grains.
  8. Add water and salt.
  9. Add mint and coriander leaves.
  10. Cover the pot and cook on medium flame until water reduces.
  11. Lower the flame and let the pulao cook on dum for 8-10 minutes.
  12. Switch off the flame and rest for 10 minutes before serving.
